SPINACH PIE TRIANGLES
Ingredients
1 package of frozen phyllo sheets
2 lbs. fresh spinach, chopped
3 fresh onions, chopped
1 sprig of dill
2 eggs
5 oz. feta cheese
1/2 cup of Monopati Extra Virgin Olive Oil
pinch of salt and pepper
pinch of rice
Instructions
For the filling: In a large bowl mix the spinach, fresh onions, dill, feta, eggs and Monopati Extra Virgin Olive.
Open the fillo dough and cut into 3 strips. (about 3 inches wide)
Add a spoonful of the spinach filling to the top of the fillo dough strip and fold it into a triangle.
Brush on Monopati Extra Virgin Olive Oil in order for the fillo dough to stick as well as give the tringles a beautuful golden brown color.
Place onto a pan lined with wax paper and cook in the oven at 350°F until golden brown.
